Tomato Barley & Vegetable Soup –
There's nothing like starting a soup with a gorgeous hunk of pastured beef (Arrowpoint Cattle Co., Nathrop, CO). Browned and braised, it creates the stock and the beefy chunks you'll find backing up the San Luis Valley purple barley (Del Norte), the fresh pulled carrots (Crestone), the onions (Olathe) and mushrooms (Alamosa) that round out this wholesome and hearty meal.

MAIN DISHES 


Thai Pork Basil Quinoa –
The deliciousness of this dish is almost indescribable. But, it's got to stem from the beautifulness of the pork itself: Pasture-raised Berkshire (Wellington, CO) has a delicate, not blunt, flavor. We toss that ground pork with fresh basil (Crestone) and serve it over organic quinoa from the San Luis Valley (Mosca, CO). Yum!

Smoked Trout Stuffed Baked Potato –.Our trout are raised right here in the Arkansas Valley (CCI, Buena Vista) then they're filleted and smoked for an incomparable flavor. They're fantastic against the solid background of an organic russet potato (Mosca, CO) and a bit of sour cream and cheese.

High Rockies Cubano Panini– When you're in Cuba you might expect ham, but here in the Rockies, of course, it's beef. In this case a beautiful, all natural summer sausage from the Salazars (Manassa). We load it and the traditional accompaniments: swiss cheese (Olathe), bread and butter pickles (Manzanola) and Molicious Mustard (New Castle) onto freshly baked Salida Bread Co. bread (Salida). Not Your Grandma's Roast Beef Sandwich – Yes, we start with the kind of beef your Grandma probably ate: all -natural, pasture-raised and finished for an authentic flavor (Arrowpoint Cattle Co., Nathrop). And, it's on hand-made bread that's baked right in our kitchen every day (Salida Bread Co., Salida). And, it's even got all-natural cheese made at a small family dairy (Olathe, CO), just like Grandma's would have had. But, then we top it off with Zuke's pickled cabbage with caraway (Boulder, CO) -- zippy and zingy and Oh So Good. So, probably not like Grandma's -- unless, of course, you called her "Bubbe." Hummus like you never had Chick peas are the traditional starting point for hummus in the Mediterranean.  But, Colorado beans (pintos, black beans and anasazis) all make amazing hummus.  Our kitchen gussies it up a bit with roasted chiles or garlic or other good stuff – check today's variety.
