We update our deli menu daily and welcome new recipe suggestions. Our deli offers gluten-free, dairy-free, vegetarian and vegan deli options as well.

Hot & Sour Asparagus Soup -  This is an amazingly zippy spin on a traditional hot and sour soup.  EXCEPT, that we've loaded it wit big chunks of Milberger Farms asparagus, ginger, onions, garlic and carrots.  Then we top it with a little sriracha - SO delicious.

MAIN DISHES 

Green Chile Mac-n-Cheese - We don't know exactly why this dish just sings.  Maybe it's the hand cut pasta (Joe-Vito-Bella, Pueblo) or the rich all-natural cheese (Rocking W, Olathe) or perhaps its those super-flavorful green chiles (Milberger Farm, Pueblo).  But, whatever it is, this dish is incredible.

Cheese, Chicken, Pork and Tamales - Almost everything in our deli is handmade by our staff right here. But, Wayne and Lisa at the Tamale Connection (Antonito) are sooooo good at what they do, there's no reason for us to re-invent the wheel. Their tamales are mostly meat with just a bit of masa layered around either pork (w/green chile) or chicken (with red chile). No filler here! Or, in the case of the veggie tamales, the masa and cheese are intermingled perfectly. With varying spice levels, there's something that's right for just about everybody

High Rockies Cubano Panini– When you're in Cuba you might expect ham, but here in the Rockies, of course, it's beef. In this case a beautiful, all natural summer sausage from the Salazars (Manassa). Not a Bierock Sandwich – What the heck is that?! Wikipedia say Bierocks are "meat-filled pocket pastries originating in Eastern Europe." While everybody probably has their own recipe, ours are filled with Arrowpoint's all-natural ground beef and Musso Farms cabbage (Pueblo, CO) and then wrapped in chewy Salida Bread Co. (Salida, CO) French baguette and baked to a golden brown. With a unique flavor profile, once you've had a Bierock, you'll never forget it.
