Cheese, Chicken, Pork and Tamales Almost everything in our deli is handmade by our staff right here. But, Wayne and Lisa at the Tamale Connection (Antonito) are sooooo good at what they do, there's no reason for us to re-invent the wheel. Their tamales are mostly meat with just a bit of masa layered around either pork (w/green chile) or chicken (with red chile). No filler here! Or, in the case of the veggie tamales, the masa and cheese are intermingled perfectly. With varying spice levels, there's something that's right for just about everybody.

Green Chile Mac-n-Cheese –We admit it. We don't really know why exactly this mac and cheese sings. It could be the hand-cut pasta from Lisa Musso in Pueblo (including whole wheat, plain and green chile varieties), or the two varieties of Rocking W cheese (Olathe) or maybe it's the roasted mild Anaheim chiles (Milberger Farm, Pueblo). But, whatever it is, this stuff is INSANELY good!!!

Stuffed Butternuts – A meal that's as beautiful to look at as it is to eat. We roast acorn or butternut squash (Pueblo) until it just yields. Then we stuff its lovely hollow with organic quinoa (Mosca) that's been tossed with sautéed onions (Olathe), garlic (Avondale) and anaheims (Pueblo). And the last touch: a sprinkle of roasted pine-nuts.

High Rockies Cubano Panini– When you're in Cuba you might expect ham, but here in the Rockies, of course, it's beef. In this case a beautiful, all natural summer sausage from the Salazars (Manassa).
